On Wednesday, September 12, the Gracie’s team moved from Providence to Portsmouth for a spectacular evening with the Outstanding in the Field tour. This year’s dinner was held at Aquidneck Farms on what could only be described as a picture-perfect setting with the table for 150 guests extending down to the western bank of the [...]

It’s that time of year when food writers take a look at that shelf of books we’ve been sent review copies of, or purchased ourselves, and suggest people give some of them as gifts. In an effort to not be a list you’ve already read—yes, The Art of Living According to Joe Beef is amazing, Ruhlman’s [...]

And so it goes. Our year of meat has come to a close. For the final Charcutepalooza challenge we were told to show what we learned all year. In Cathy’s own words, do some “showing off” with a celebration. Personally, I think a lot of the Charcutepalooza participants have been showing off all year long—and I [...]

Newport Restaurant Week (NRW) begins anew this Friday, November 4, at over 55 restaurants in Newport & Bristol Counties. Diners at participating restaurants get to enjoy three-course lunches for $16, and three-course dinners for $30, from the 4th through November 13. Another month has passed and we’re sadly that much closer to the end of The Year of Meat. There’s no way I’m going to stop making any of these Charcutepalooza treats, but I don’t think I’ll be documenting them in quite as much detail. Usually when I’m cooking there’s fourteen other things (or just two [...]

Tallulah on Thames co-owners Chef Jake Rojas & Kelly Ann Maurice have started “A Farm to Taco Cart” business called, naturally, Tallulah’s Tacos. The cart debuted at the Coastal Growers’ Market at Casey Farm on Saturday, May 14 to huge success. There was a steady line of people and all of the tacos for the [...]

Another month has passed and it’s time for the fourth Charcutepalooza installment. This time we’re hot smoking (with a little bit of past months’s salt curing and brining thrown in too) and we’re back to all pork using Boston Butt (shoulder) and loin cuts. Once again I turned to Persimmon Provisions for some of my [...]

After this winter, it seems as if everyone is working hard to bring about spring. When I asked bartender Alicia Canning about working on the five new drinks for Tini‘s Spring Cocktail Line she gave kind of a sly smile. I’ll just say bringing about spring at Tini can be intoxicating and leave it at [...]

Persimmon Provisions, an artisan butcher shop in Barrington, is now open. The store is stocked with turkeys for Thanksgiving, both all-natural and organic varieties. A side of Blackbird Farm beef, from Smithfield, Rhode Island, was brought in and butchered to offer local steaks, roasts and ground meat to customers. Another local farm, Round the Bend [...]

On Monday, March 8th, 2010 Gracie’s restaurant in Providence, Rhode Island held their first Star Chefs dinner of the year. For the dinner that evening Gracie’s invited Chef Celina Tio of Julian in Kansas City, Missouri to collaborate with Gracie’s Executive Chef Matthew Varga on a menu they called American Classics. The dishes lived up [...]
