A probe thermometer is crucial to cooking roasts and larger cuts of meat to the proper temperature, plus you can use it for deep frying, candy and more.
David also highly recommends an instant thermometer which can used to temp just about anything cooked on a grill or stove top. The Thermapen® ONE is the best of the best, but the less expensive ThermoPop® 2 will work well too. Simply hold the item off the heat and quickly check its temp.
