The Industrious Spirit Company Announces First Ever Oyster Vodka Released in United States

Celebrates with Launch Party Featuring Specialty Version of Ostreida created for Bayberry Garden

The Industrious Spirit Company's Ostreida
The Industrious Spirit Company’s Ostreida

Today, The Industrious Spirit Company (ISCO) announced Ostreida, the first vodka distilled with oysters in the United States. In a world where so many products are created every day it’s rare to find a company doing something new and original. This product is a unique expression of the fundamental elements of earth and ocean, perfectly captured in a bottle.

In celebration of Ostreida, Bayberry Garden and ISCO are announcing a limited edition, small batch run of Ostreida made with a special selection of oysters from Duxbury, MA that were hand-picked for the project by Bayberry’s Executive Chef, Mike Seely. This incredibly special unique spirit will be sold exclusively in cocktails at Bayberry Garden and in bottles from the Tasting Room at ISCO.

“Our vision for our newest product was to create a perfect blend of land and sea, to capture the spirit of where we draw our energy from as a company operating out of the Ocean State. We have always had a focus on sustainability, and work with a regional regenerative farm to grow the organic corn we use for the base of our spirits—so it just made sense for us to work with oysters, one of the most sustainably farmed foods from the sea, known for their positive environmental impact (and of course their incredible flavor!)” said Manya K. Rubinstein, CEO of ISCO. “We’re thrilled to add the first vodka distilled with oysters to our roster of spirits, Ostreida brings a savory and briny seacoast minerality with a subtle hint of bivalve bouquet on the nose that mixes sublimely with our spirits’ signature buttery texture and creamy finish.”

A launch party for Ostreida featuring the version created specifically for Bayberry will be held at ISCO’s Tasting Room on January 23, 2022 from 2pm – 6pm and will feature food and oysters by Bayberry Garden, as well as ocean-themed music by Da Huey X. The party will continue from 6-9pm at Bayberry Garden with a special oyster and Ostreida focused bar menu. Those who attend both the party and the afterparty will have a chance at winning a gift basket that includes oyster shucking gear, beautiful oyster jewelry from RI-trained artist Xenos Works and hot sauce from Bayberry Garden.

“We are so excited about this collaboration between our two brands, who both care deeply about supporting sustainable local agriculture and aquaculture,” said Tom Dennen, the owner of Bayberry Garden and Bayberry Beer Hall.

To further a commitment to supporting regenerative farming practices, The Industrious Spirit Company is donating a portion of all bottle sales of Ostreida at bars, restaurants and liquor stores to GreenWave, an organization that trains and supports ocean farmers in the era of climate change by working with coastal communities to create a blue economy. In support of the same goals, Bayberry Garden will be donating a portion of Ostreida sales from the afterparty to GreenWave.

ISCO makes their vodkas, gins, bourbons and experimental spirits from scratch, giving them the latitude to be creative. The base for their products begins with 100% organic corn grown for them in the Hudson Valley, NY by a farm that uses regenerative agricultural practices such as long-term crop rotations and cover crops in order to rebuild soil health, sequester carbon and keep waterways clean. ISCO prides itself on aligning its sourcing with its ideology of sustainability. The company works with local farmers in Rhode Island to repurpose its still nutrient dense production “waste” as feed for pigs, cows and goats.

“Access to incredible, sustainably grown, super fresh oysters are one of our favorite perks of living in the Ocean State,” said ISCO’s Head Distiller Dan Neff. “To create Ostreida, we perform a distillation using our 100% organic corn neutral spirit and just-hauled-from-the-sea oysters, which allows the spirit to pick up hints of minerality and oyster flavor from the whole oyster. We let the resulting distillate rest to let the flavors meld, then gingerly bring the proof down to 80 for a smooth sipping experience.”

News Bites: The Industrious Spirit Company Releases Patina / First Annual Taste of Thayer / G Pub Reopening in Providence

The Industrious Spirit Company Releases Third Retail Product, Patina

Patina by The Industrious Spirit Company

Just a year and a half after opening their doors, well really a window, during a pandemic The Industrious Spirit Company is adding a third mainstay product, Patina – a bourbon barrel aged gin. Joining their Structural Vodka and Ornamental Gin this product will be available at Rhode Island restaurants and liquor stores beginning tomorrow. ISCO will also feature a special handmade Patina themed bag giveaway to the first ten people to purchase a full-size bottle online to pick up at the distillery that night.

“Patina—our bourbon barrel aged gin—perfectly embodies our commitment to superior flavor as well as to reuse and revitalization. In the same spirit with which we create our products out of a reimagined former steel yard in the heart of Providence’s Industrial Valley, we reuse the charred oak barrels initially used to age our Blue Velvet Bourbon to turn our Ornamental Gin into something entirely unique and delicious,” said Manya K. Rubinstein, CEO of The Industrious Spirits Company.

Starting with organic corn from a regional farm, they do multiple runs through the copper Vendome still to create the neutral spirit, which is slowly proofed down and then followed by the more delicate process of steeping it in botanicals in various ways to create the flavor profile. Once that is achieved, they begin the charred oak barrel process once used to create their Blue Velvet Bourbon. The process takes time. Whenever aging a spirit you can expect it’s depth and beauty of flavor to take time.

A bridge between their clear and aged spirits, Patina is a great option for gin fans who want to try something new and also for those that prefer brown liquors like bourbons to clear spirits. The experience of drinking Patina is entirely different than imbibing ISCO’s regular Ornamental Gin—the oak imparts flavors of sweet vanilla and caramel to the floral, herbal gin, creating complex layers that float in your mouth. Fabulous sipped by itself on the rocks, or in a cocktail such as a Bee’s Knees or a twist on an Old Fashioned.

Tini’s Spring Cocktails Are Here, Along With Two New Dishes

by David Dadekian April 1, 2011
written by David Dadekian

The new Spring Cocktails at Tini, from left to right: [verb] my Green Bikini in [place], A Classy [noun], [noun] on the Horizon, [verb] the White Dog, Make Her [verb] This Time

The new Spring Cocktails at Tini, from left to right: (verb) my Green Bikini in (place), A Classy (noun), (noun) on the Horizon, (verb) the White Dog, Make Her (verb) This Time

After this winter, it seems as if everyone is working hard to bring about spring. When I asked bartender Alicia Canning about working on the five new drinks for Tini‘s Spring Cocktail Line she gave kind of a sly smile. I’ll just say bringing about spring at Tini can be intoxicating and leave it at that. It can also be delicious, as proven by Chef Darius Salko’s two new dishes. When I received Salko’s message mentioning a fried chicken skin sandwich you could almost see the swooshing, curly speed lines behind me as I rushed to Tini.

Orange Dream Salad (larger version at end of piece)

Orange Dream Salad (larger version at end of piece)

First, the food. In addition to the fried chicken skin sandwich, which is more properly called The Crackling Club, there is the Orange Dream Salad. I’ll confess, when Salko told me what was in it—orange and grapefruit segments, dates, Bulgarian sheep’s milk Feta cheese, red seedless grapes, torn mint, cinnamon and pomegranate seeds—I wasn’t sure how that combination would work. But I’ve learned to have faith in Salko’s method of putting together good, fresh ingredients in clean, simple ways that create hugely flavorful dishes. Salko told me, “We serve it with two tortillas and you kind of just have a ball,” and he was so right. I highly recommend ordering the Orange Dream Salad, especially if you’re going to also have The Crackling Club, which as you might imagine, is so good (and only a little bit “bad”).

The Crackling Club (larger version at end of piece)

The Crackling Club (larger version at end of piece)

While you might think a fried chicken skin sandwich sounds hedonistic, again, in the Tini style of fresh and simple, it’s really a somewhat light sandwich. I say somewhat because it is a club sandwich, so there’s also house cured & smoked bacon, Allen Farms red mustard greens, sweet cabbage, pickled shallots, bread-and-butter pickles and house made mayonnaise, along with the two chicken cracklings. It’s all piled beautifully on their house made brioche. The chicken skin is perfectly crisped and slightly puffed so the effect is really a somewhat light spring-like club sandwich and not something heavy.

Now, the cocktails. Canning prepared five beautiful drinks for me to play with making photos of, and then of course I got to try them all. The Spring Cocktail Line is called “Ad Lib” and the names of the drinks require the person ordering to fill in some key words, in the style of a favorite childhood written word game. Sure the missing spots in the cocktail names could all be filled-in with words loaded in innuendo, but then who didn’t do that with Mad Libs anyway (0r skipped the innuendo altogether and just went straight to the gutter)? The cocktails are:

  1. White Whisky, Muddled Cucumber = [verb] the White Dog
  2. Cachaça, St. Germain, Basil = [verb] my Green Bikini in [place]
  3. Belvedere, Framboise, Lemon, Champagne = A Classy [noun]
  4. Genever, Maraschino, Violette, Mint = [noun] on the Horizon
  5. Maker’s Mark, TINI Grenadine, Thyme = Make Her [verb] This Time

I really enjoyed the “[verb] the White Dog.” It uses Death’s Door White Whisky which is fermented in stainless steel and finished in uncharred oak barrels so it never gets the caramel color or smoky flavors of a traditional whisky. Personally, I wouldn’t call it a whisky, or maybe label it with an asterisk, because it’s a delicious drink and people who aren’t fans of whisky might pass it by. The “Make Her [verb] This Time” was also a favorite. The thyme and a little touch of salt in it really brings out some subtle flavors. All the drinks were perfectly balanced and should be big hits.

In addition to the new drinks and dishes, Tini is now serving late on Wednesdays with live music. Salko posted, “It’s the Tini Show starting at 10 p.m.! 3 excellent musicians, amazing cocktails, $15 wine bottles, late night grub until 11 p.m. You can’t go wrong! Tini Weenies and Fries will be served for the Music Lovers!”
